It’s hard to believe another year is coming to an end. It seems like each year goes faster than the previous one. How do you like to celebrate the new year? We usually stay home as a family, watch a movie, play games and enjoy good food. I like to serve a fancier type dessert because we are ringing in the new year after all. This year we’ll be making these Cocoa Pebbles Chocolate Raspberry Parfaits. These desserts make both the adults and the kids happy!
You too can make these Cocoa Pebbles Chocolate Raspberry Parfaits to ring in the new year. Here is what you will need:
Cocoa Pebbles Chocolate Raspberry Parfaits
- 1 tub whip topping
- 1 cup fresh raspberries
- 3/4 cup Post Cocoa Pebbles
- 1 1/2 cup chocolate pudding
- 1 chocolate cake mix (make as directed on box mine called for ingredients below)
- 1/3 cup oil
- 3 eggs
- 1 cup water
Make cake as directed on box and pour batter into a 15 x 9 jelly roll pan. Bake for 20 minutes at 350 degrees. Remove from oven and let cool completely. Since my parfait containers are round I used a circle cutter to cut the chocolate cake. You can use a cutter or just cut the cake into into cubes if you don’t have the right shape cutter for your containers.
To make the individual parfaits add a layer of cake on bottom, then a layer of whip topping. Sprinkle some Cocoa Pebbles on top of the whip topping and then add some raspberries. Next, add pudding and another layer of cake.
Add whip topping and a generous amount of Cocoa Pebbles around the perimeter of your parfait glasses. I like to finish it off with a raspberry in the middle. I love the chocolate crunch that the Cocoa Pebbles add to the dessert. Enjoy!
